         JRod's Shredded Pork

         

This is a simple recipe. Take a pork shoulder and cook it slowly for about 3 – 4 hours. Take your time making this recipe, so the whole family can enjoy.

Prep Time:

Cook Time: 3-4 hrs
Servings: 4-6 (depending on size of roast)

Ingredients

1 Pork shoulder roast 
   Salt and fresh ground pepper
   JRod's Chipotle Brown Sugar Rub

   JRod's Chipotle Brown Sugar BBQ Sauce

Directions

1. Season the roast with salt and fresh ground pepper (both sides). Let the roast sit for 20 minutes at room temperature.
2. Season the roast with JRod's Chipotle Brown Sugar Rub (both sides).

3. Pour 1/3 cup of water (helps preserves juices) into a 9 x 13 -inch backing pan
4. Place roast into the 9×13-inch pan with water, cover with foil and roast at 300°F
for 3 to 4 hours.
5. Shred meat using two forks, removing all bones and skin.
6. Stir with JRod's Chipotle Brown Sugar BBQ Sauce. Serve in crusty rolls and/or bread of choice.


   JRod's Smoked Chicken Wings

Inactive Prep Time: 24hr
Cook Time: 1 - 1 1/2 hr's
Servings: 6 (depending on size of wings)
Main Ingredient: JRod's Chipotle Brown Sugar BBQ Sauce and Rub

Ingredients

1 jalapeno pepper, seeded and sliced
4 cloves garlic, chopped
1/4 cup vegetable oil
1 tablespoon tomato paste
3 tablespoons of JRod's Chipotle Brown Sugar Rub
1 Pinch salt
3 tablespoons of honey
1 1/2 limes, juiced
3 pounds chicken wings, rinsed and dried
1/2 lime, Zested
1 cup of JRod's Chipotle Brown Sugar BBQ Sauce

Directions

 In a blender, puree until smooth the jalapeno pepper, garlic, vegetable oil, tomato paste, honey, Jrod's rub and lime juice. Pour marinade over chicken wings. Add lime zest and toss to coat. Cover in plastic bag and refrigerate overnight.

Pre heat grill to 225 and add wood chips (hickory) into smoke box and place chicken on grill and smoke for 1 to 1 1/2 hrs. 

Coat the the wings with JRod's Bcakyard Grill Chipotle Brown Sugar BBQ Sauce
10 minutes before taken off the grill. Use your favorite Ranch Dressing for dipping.

 

       Margarita with Jalapeno-Infused Tequila

Margaritas are by far one of the best summer drinks, but do know what's even better? Spicy margaritas! Bring this drink to a whole new level by infusing tequila with the wonderful jalapeno pepper. Garnish with lime and you're set for the night.

 Ingredients

  • 4 ounces jalapeno-infused tequila (see below)
  • 1 1/2 ounce fresh orange juice
  • 1 ounce fresh lime juice
  • 2 ounces triple sec
  • Lime slices for garnish
  • Salt (if desired)
  • Ice

Cooking Directions

  1. Fill a large drink shaker with ice.
  2. Add all ingredients except the lime slices. Shake well.
  3. Strain into chilled margarita glasses. (NOTE: You can rim them with salt before straining, if you prefer salt with your margarita)
  4. Serve! Makes 2 glasses.

Jalapeno-Infused Tequila

  • 1 cup tequila
  • 2 large jalapeno peppers

Directions

  1. Slice the jalapenos into rings and add them to a container with a lid.
  2. Add tequila and seal. Shake well.
  3. Let set for 4 hours - less time for a milder jalapeno flavor, longer for a stronger flavor. The jalapeno peppers will infuse the tequila with their wonderful spiciness.
  4. Strain the tequila to remove the jalapeno peppers and use as needed above.
  5. Enjoy!

Pork Baby Back Ribs
JRod's Backyard Grill Chipotle Brown Sugar Rub
Salt
Black Pepper
JRod's Backyard Grill Chipotle Brown Sugar BBQ Sauce

Directions

  1. Lightly Salt and Pepper ribs, both sides
  2. Sprinkle as much Jrods Backyard Grill Chipotle Brown Sugar Rub on both sides of the ribs, as desired. To prevent the ribs from becoming too spicy, do not rub the spices into the ribs.
  3. Refridgerate for 2 hours 
  4. Preheat grill for high heat
  5. Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lightly oil grate, and lay ribs on top rack of grill. Reduce heat to low, close lid, and leave undisturbed for 1 hour. Do not lift lid at all.
  6. Brush ribs with JRods Backyard Grill Chipotle Brown Sugar Barbecue Sauce, and grill an additional 5 minutes. Serve ribs as whole rack, or cut between each rib bone and serve.


     JRods Sweet and Spicy Popcorn

Ingredients

  • 1 tablespoon sugar
  • 2 tablespoon JRods Backyard Grill Chipotle Brown Sugar Rub
  • 1/2 teaspoon ground cinnamon 
  • dash cayenne pepper
  • 1 bag of buttered microwave popcorn 

    Directions

    1. Place sugar, chipotle brown sugar rub, cinnamon, and cayenne pepper in a ex-large zip-type plastic bag. Mix. Add to 1 bag of popped microwave buttered popcorn and shake until popcorn is coated. Enjoly...... 

     

         Carne Asada Tacos

    makes 8-10 tacos

    1 skirt steak or 2 hanger steaks

    Marinade
    juice of 1 limes
    1/4 cup olive oil
    1/4 cup minced cilantro
    1-2 Serrano chillies, minced (to taste)
    1 tablespoons minced garlic
    1 teaspoons sugar
    1/2 teaspoons ground coriander seed
    1/2 teaspoons Mexican oregano
    1/4 teaspoons ground cumin seed
    2 teaspoons kosher salt (less if using table salt)
    black pepper to taste
    1 tablespoons pureed kiwi (optional)

    garnish
    1/4 cup sweet onions minced
    1/4 cup cilantro minced

    1 batch of homemade tortillas

    Combine all the marinade ingredients in a container with a lid that will fit the meat. Kiwi has a powerful enzyme called actinidin that breaks down protein, making it a great addition to the marinade if you don’t plan on letting the meat marinate overnight. Taste it and add more salt or sugar if needed. It should be relatively salty, but not so salty that it burns your tongue. The sugar is a personal preference thing. If you like it sweeter, add more sugar.

    When you’re ready to grill the meat, remove it from the refrigerator about 30 minutes before cooking to allow it to come to room temperature. This helps ensure the Carne Asada will cook evenly. If you’re using a broiler, move the rack to the top position and turn the broiler on high, with a grilling rack on top of a baking sheet. Scrape any excess marinade off the meat and place the meat on the grill. Cook until nicely browned on one side, flip and brown the other side. Skirt steak will cook much faster than hanger steak, so be careful not to overcook it.

    Transfer the Carne Asada to a cutting board and let it rest for at least 5 minutes. Use a sharp knife to roughly chop up the meat then add it to a bowl with the sweet onions, cilantro, and any juices that accumulated on the baking sheet or cutting board.

    Serve the Carne Asade with fresh tortillas and Pico De Gallo.
